Former sous chef at CBD restaurant Le Foret and former line cook at Gautreau's, Mimi Assad is now turning out pies by the dozen at the Uptown ramen joint Noodle & Pie (reviewed in this issue).

 

How did you get the job?

I baked a blueberry and nectarine pie for the job interview. Honestly, this was the first interview I've ever had where I had to bake a pie for it.
