How long have you been coming to the Palm Court?
I sang here on opening night in 1989. Had the Oysters Bordelaise, that’s probably when I got hooked on them. When Nina [Buck, the owner] sees me, she goes, “You want your oysters?”
What are Oysters Bordelaise?
They are deep-fried and served with this wonderful green sauce, boiled potatoes and broccoli. Another thing I love to eat here is the chicken ambrosia, in a cream sauce with fennel and Pernod. I love it, and I shouldn’t even be eating it.
I know you cook. Have you ever cooked for Nina?
I have! I cooked red beans for Nina and her family in France. We’ve traveled together, lots of tours. Each morning, we would wake up, “Are you cooking? Am I? Are we both?” Nina is like my mother; she wants to feed everybody. I don’t eat everywhere, but this is like home. I feel like I’m in Nina’s dining room when I come here.
